An intense and highly complex wine. Immensely fragrant: walnuts, almonds, caramel, candied orange, dried apricot, cinnamon, nutmeg and an antique pirate barrel base reminiscent of the sea and iodine. On the palate, it&#8217;s like a 100m race dessert at the Olympics: energetic, velvety, mineral, finely tannic and explosive. Perfection without having to spend hundreds of dollars.</p>

<p>Para muitos no mundo do vinho, a Madeira é uma alegria injustamente subvalorizada, e os notáveis vinhos desta ilha vulcânica no Atlântico são tesouros secretos que, um dia – um dia – o mundo virá a amar e apreciar.</p>
<p>Uma hora na companhia do apaixonado e entusiasta <strong><em>Humberto Jardím</em></strong>, diretor da Henriques &amp; Henriques, pouco faz para desfazer essa impressão. Ao mesmo tempo, contudo, não se pode deixar de pensar se a Madeira não tornou as coisas demasiado complicadas para si própria – e para o consumidor.</p>
<p>Temos cinco vinhos à nossa frente: um Sercial de 2001, um Verdelho de 2007, dois Boals (2000 e 1997) e uma Malvasia de 2001. Em termos de preço de retalho, estão principalmente entre £66 e £78,50 por garrafa; o valor atípico é o Boal de 1997, que custa cerca de £170.</p>
<p>Cinco Madeiras vintage, então. Na verdade, não. Quatro dos cinco – mais uma vez, exceto o de 1997 – são vinhos de uma única colheita, ou colheitas, envelhecidos por um mínimo de cinco anos. O Boal de 1997, entretanto, foi maturado por mais de 20 anos, o que lhe permite ser qualificado como um Madeira vintage.</p>
<p>Exceto que não é. Jardim explica pacientemente que não se pode colocar a palavra “vintage” numa garrafa de Madeira, pois é uma marca registada pela indústria do Porto. Em vez disso, pode-se chamar-lhe Garrafeira ou Frasqueira. Ele até teve de tapar a palavra “vintage” em algumas garrafas mais antigas para cumprir as regras.</p>

<p>Ok, então está claro. Mais ou menos. Depois, é intrigante que haja uma diferença de preço entre os dois Boals, considerando que a sua única diferença aparente são três anos de envelhecimento. Bem, não exatamente. A colheita de 2000 está no mercado há cerca de uma década (o que significa que passou talvez 10-15 anos em carvalho); o de 1997 é novidade para 2024.</p>
<p>Ao prová-los juntos, os contrastes, pelo menos, são muito claros. A colheita de 2000 é precisa, linear e guiada por fruta ainda vibrante; o &#8220;vintage&#8221; de 1997 é cheio, rico, intenso, com fruta cozida, tâmaras e chocolate preto, além do toque salgado do acúmulo de ácido acético. Ambos partilham um caráter de especiarias perfumadas – quase cravo no de 2000, uma pitada generosa de garam masala no de 1997.</div>

<p>Voltando ao Sercial de 2001 – um vinho aparentemente super-seco mas equilibrado, com aromas de erva cortada e uma acidez tão penetrante que é como um balde de água salgada na cara – será que é quase tão velho quanto o Boal de 1997 ou um pouco mais jovem que o de 2000?</p>
<p>Nenhum dos dois. Foi engarrafado em janeiro de 2019, mas passou 16 ou 17 anos em madeira antes de ser transferido para tanque; o engarrafamento é feito sob encomenda.</p>
<p>Produzir vinho na Madeira – a topografia, o clima, o regime de maturação (tipo de madeira? Caves secas ou húmidas? Ao nível do mar ou em altitude?) – já é suficientemente complicado. Mas gerir o fornecimento e disponibilidade destas colheitas, e ler o mercado, adiciona outra camada de complexidade.</p>
<p>“Tento ter uma boa quantidade de colheita – pelo menos 5.000 litros – para aumentar a longevidade no mercado”, explica Humberto Jardím. Ele vira-se para o Verdelho de 2007 (suave, arredondado, cheio de raspas de laranja e fruta tropical), que ele diz ter sido um grande sucesso, mas que agora está a acabar. “Quando enviar o de 2008, sei que as pessoas vão dizer: ‘Ah, mas o de 2007&#8230;’</p>
<p>“Muitas vezes disse à nossa equipa que temos de ter cuidado com as colheitas porque temos de manter a consistência. As pessoas estão a trabalhar arduamente para vender o de 2007, e depois, de repente, acaba.”</p>
<p>Complexo, evasivo e com uma vasta gama de estilos – desde o Sercial penetrante até uma Malvasia exuberante que canta mel escuro, tâmaras e melaço com toques de rum – mas fica-se com a impressão de que Jardím ainda aprecia o desafio.</p>
<p>Ele compara servir um Sercial a um novato da Madeira a oferecer-lhes um prato de queijo azul, “onde talvez o cheiro não seja tão agradável – o Sercial é assim”. Mas depois provam, combinam com comida – e tudo muda.</p>
<p>A chave para um grande Madeira, diz Jardím, é o triângulo de álcool, acidez e açúcar residual. Esse Sercial revigorante tem 55g/litro de açúcar residual, mas ao prová-lo, seria fácil jurar que é um erro de impressão. O ácido acético na maioria destes vinhos ronda 1g/litro, mas os vinhos mais antigos podem atingir 2g/litro, altura em que estamos a correr o risco de entrar na “melhor para o seu peixe com batatas fritas” categoria.</p>
<p>Para complicar ainda mais, Jardim admite que não tem ideia de como um vinho irá evoluir quando o coloca no barril. “Na altura da colheita, é impossível para nós sabermos”, admite. “Não podemos dizer no início se o vinho será um ‘vintage’. Não temos uma bola de cristal.”</p>
<p>O longo e suave processo oxidativo, que transforma compostos fenólicos e desenvolve esses maravilhosos sabores terciários e cerosos, é ao mesmo tempo demorado e altamente imprevisível. “Com estes vinhos de um único ano, se tiveres 10 barris, todos serão diferentes e terão sabores distintos,” diz Jardím. Depois, o trabalho passa para o mestre de blend.</p>
<p>Para os envolvidos no mundo do vinho, o detalhe técnico pode ser fascinante. Mas e o pobre consumidor? “No início dos anos 2000, as pessoas faziam perguntas sobre muitas informações técnicas, como a fermentação interrompida, que álcool de fortificação usas, e assim por diante,” diz Jardím. “Depois, isso mudou e as pessoas começaram a perguntar: ‘Para que serve a Madeira? Por que razão escolheria a Madeira para a minha vida?’”</p>
<p>Essas questões revertem para os próprios exportadores de Madeira, em termos de reflexão sobre a relevância para o consumidor. Estes vinhos de colheita única são apenas a ponta de um iceberg considerável (as variedades de uva branca ainda representam apenas 20% da produção, com os restantes 80% Tinta Negra).</p>
<p>O bom vinho da Madeira pode estar a ter sucesso nos EUA, onde os preços médios por garrafa atingem os €13, e mesmo – relativamente – no Reino Unido, onde estão pouco abaixo dos €10. Mas e a França, onde a maioria das pessoas paga €6 ou menos por algo que coloca na cozinha, e não no bar de bebidas?</p>
<p>Jardím acredita que há trabalho a fazer nos EUA, com o desenvolvimento de cocktails usando Madeiras mais jovens, e espera que produtos como o Vento do Oeste – uma Madeira Tinta Negra envelhecida em cascos de Bourbon vindos do Kentucky – possam abrir a porta para um público americano que deveria – em teoria – estar ainda mais recetivo ao charme da Madeira.</p>
<p>“Nos EUA, é preciso contar uma história”, diz. “Eles querem diferenciação, e querem algo que seja artesanal – não apenas feito numa grande fábrica – e com ligação a um ser humano.”</p>
<p><em>Os vinhos Madeira da Henriques &amp; Henriques estão disponíveis no Reino Unido através da Mentzendoff. O Boal ‘vintage’ de 1997 deverá estar disponível em lojas de vinhos finos ainda este ano, com um preço recomendado de £170.</em></p>

<h3 class="wp-block-heading">About Madeira wine</h3>
<p>&#8220;&#8230; Madeira is a fortified wine, but it is produced in a unique way on the solitary island of Madeira, which lies some 320 miles off the west coast of Morocco. Discovered by the Portuguese in 1419, Madeira was established as a stopping point on transatlantic voyages, where ships stocked up on food, water and wine. The wine was fortified with rum produced on the island from the sugar cane that grew there to help preserve it during the voyage. As the ships crossed the tropics, the barrels of wine were exposed to oxygen and heat &#8211; normally the declared enemies of wine, but which instead transformed it into something very special.</p>
<p>Nowadays, heating takes place on the island itself, which makes the wine totally stable and gives it an almost indefinite shelf life, even after opening &#8211; I was lucky enough to taste a wine made in 1827, which still tasted incredibly vibrant and fresh.</p>
<p>Madeira&#8217;s four traditional &#8220;noble&#8221; grape varieties are sercial, verdelho, boal (also called bual) and malvasia (or malmsey), which are always made in dry, semi-dry, semi-sweet and sweet styles respectively. But the most widespread is the versatile tinta negra, used to make wood in all these styles and usually used for blended wines, rather than wines from a specific vintage. All have a distinct acidity that means even the sweetest are never cloying, and all have Madeira&#8217;s characteristic notes of dried fruit, nuts, caramel, candied citrus peel and soft, warm spices &#8211; the flavours of Christmas itself.&#8221;</p>

<p>&#8220;Fantastic value for this elegant, bone-dry sercial. It&#8217;s a blend of wines, the youngest of which is 10 years old, although some may be much older than that. Expect dried apricots and toasted almonds with a bite of cooked apples, and serve chilled with potato chips, nuts, hard cheeses or as a very elegant accompaniment to cheese toast with date chutney and tamarind.&#8221;</p>

<p>It&#8217;s not Port, but this fortified wine comes from Portugal. Instead of coming from the mainland, its origins are in Câmara de Lobos, a small town on the south coast of the island of Madeira.</p>
<p> Henriques &amp; Henriques, founded in 1850, is responsible for producing this lighter, less sweet version of Madeira&#8217;s fortified wines.</p>

<p>The glass fills with a delicious amber liquid. An exuberant aroma of caramel, figs, raisins and candied fruit rises to the top. In the mouth, the sweetness isn&#8217;t too pronounced, the acidity provides a pleasant freshness and the 19% alcohol content doesn&#8217;t hide the pleasure from the taste buds. Its profile makes it very versatile, allowing it to be used in a variety of ways. As suggested on the bottle, it can be served as an aperitif, with ice and a touch of lemon, or as a cocktail. It can also be enjoyed on its own, as an after-dinner drink, with a cheese platter or with desserts. And what else? It can also be used in cooking to enhance a sauce or marinade. Last but not least, it can be stored for several months after opening, giving us the opportunity to prolong our enjoyment! &#8220;</p>

<p>For the tasting, we have five wines from 1997 to 2007 with a typical retail price of around £70. It&#8217;s clear from the outset that Jardim&#8217;s quiet enthusiasm and deep knowledge of the wines are totally infectious, making this a rare introduction to Madeira of the highest standard.&#8221;</p>

<p class="has-text-align-left wp-block-paragraph">&#8220;Madeira is a volcanic island 640 kilometers west of Saharan Africa, administered by the Portuguese since colonial times. Once sober and calm, the tourism industry there is courting a younger audience. But the wines themselves still have their characteristic acidity and a supernatural ability to age. When I ask him about it, Jardim says that he has bottles of Madeira worth around €7,000 each at home which, although opened, will last for decades, provided they are well corked.</p>
<p class="has-text-align-left wp-block-paragraph">Madeira&#8217;s secret is that the wine is fortified and deliberately oxidized to mimic the warm conditions below deck at sea in the 17th century, when the wine&#8217;s unique characteristics came to be valued. The USA soon became an important market with the Declaration of Independence being toasted with a glass of the drink.</p>
<p class="has-text-align-left wp-block-paragraph">Henriques &amp; Henriques was founded in 1850. It is one of the most famous producers and &#8211; with the claim to own vineyards on the island &#8211; exercises control over all aspects of production.&#8221;</p>

<p>&#8220;The Madeiras have been described as displaying &#8220;old school chic&#8221;. At the lower end, they offer great value for money. The quality of even the most basic Madeiras improved greatly in the late 1990s and early 2000s. Cheap wines are now much fresher and cleaner. Tinta Negro is the grape that provides important cash flow for H&amp;H. But at the more expensive and rarefied end, it&#8217;s all about refinement, complexity and a wonderful variety of flavors. There is, according to Jardím, a triangle of acidity, alcohol and residual sugar: the trick is to &#8220;create a wall of each of these facades&#8221;.</p>

The country&#8217;s Port producers have adopted the word &#8216;Vintage&#8217;, so Madeira producers are prevented from using it on their labels. <p>As we begin the tasting, Jardim explains that he will take us through a flight of wines in the same way as an orchestra, from violin, viola and cello to double bass. The &#8220;violin&#8221; that opens this sequence is the <strong>Single Harvest Sercial 2001</strong> (£75 a bottle, 20% abv). With exceptional acidity, the Sercial variety appears in the driest of wines and this is uncompromisingly one of them. It&#8217;s grippy and there are aromas of green fruit and a marked astringency. Light-colored and full-bodied, it&#8217;s perfect as an aperitif and goes well with olives.</p>

<p>Moving on to the <strong>Single Harvest Verdelho 2007</strong> (£66, 20% abv), we&#8217;re down an octave. This is lean with spicy green flavors and the more familiar Madeira flavor profile of stone fruit, nectarine and candied fruit. It&#8217;s deep amber with a tangy lemon character and a lovely vein of acidity.</p>
<p>In fact, some vineyards on the island are now using Verdelho to produce table wines, described by Jardim, in his calm and genial way, as &#8220;quite interesting&#8221;.</p>
<p>Then on to a <strong>Boal 1997</strong>, which is new on the market and is pitted against the <strong>Single Harvest Boal 2000</strong> (£70, 20% abv). There&#8217;s toffee and caramel in the &#8217;97 and Jardim points to an almost metallic finish. There&#8217;s a good deal of complexity and layering, and hints of green tea. This is simply delicious &#8211; an astonishing explosion of flavors that should win over even the most hardened skeptic.</p>

<p>The younger, semi-sweet wine is a little less flashy, showing dates and figs, and a taste of curry. There&#8217;s an aroma of dried fruit and a bit of old wood. This wine has been a big hit with customers at the H&amp;H restaurant. It found its way onto the tasting menus of one of London&#8217;s three Michelin-starred restaurants, paired with a burnt sugar tart.</p>
<p>Finally, the contrabass, or <strong>Malvasia 2001</strong> (£78.50, 20% abv). This has notes of bitter chocolate, an attractive saltiness and molasses. <p>Madeira can claim much more complexity at a younger age than Port. With its ability to survive indefinitely in an open bottle, it&#8217;s a wine tailor-made for bars and restaurants. And although it&#8217;s about refinement, there&#8217;s plenty of room for the younger cohort of imaginative mixologists to include it in their quest for new and exciting cocktails.</p>

<p class="wp-block-paragraph">Aged in old American oak casks, it shows an amber color with golden-green notes. On the palate, the oxidative characteristics of long cellar ageing are clear. A delicate dryness, lively and fresh acidity, spicy spice and a finish of dried fruit.</p>

<p class="wp-block-paragraph">Intense and persistent aroma of marmalade, candied orange peel, dried fruit and subtle notes of very old wood. Elegant and very balanced texture with a taste of candied Mediterranean fruits and spices, with great persistence. It shows layers of different levels of oxidative ageing.</p>

<p class="wp-block-paragraph">A synonym for the Trousseau grape variety (France), it ripens early and reaches high sugar levels. Long oxidative ageing has revealed a complex aromatic composition, with notes of prunes, tobacco, coffee, toffee, walnuts, toasted hazelnuts and propolis. The palate is rich, unctuous and persistent.</p>

<p class="p1"><b>5 year old Verdelho</b></p>
<p class="p2">This is a blend of wines from the <a href="https://henriquesehenriques.pt/produto/verdelho-5-anos/"><span class="s1">Verdelho variety that have been aged for at least 5 years</span></a>. Medium dry, it has intense aromas of dried fruit and spices. <p class="p1"><b>Verdelho Harvest 2007</b></p>
<p class="p2">Like all the wines in the Colheita category, it is a wine from a single harvest of grapes from the Quinta Grande vineyard. It was aged for 12 years in oak casks in our Câmara de Lobos winery, which offers very favorable temperatures for the maturation of wines throughout the year.
